Porta Singapore – Mod European Food At Park Hotel Clarke Quay

Located at the ground floor of Park Hotel Clarke Quay is their latest F&B – PORTA Fine Food & Import Company, with both a dining area and a retail area, where ingredients used in the dished could be bought over the counter.

With a total of 134 seating capacity (both indoors and alfresco dining), diners are greeted with an interior with a colonial influence.

Signature dishes at PORTA include Iberian Pork Secreto ($26), Foie Gras ($24), Spanish Octopus ($18) and Coconut Blanemange ($12).

Prices here are reasonable for the portion served.

Our favourite was the Iberian Pork Secreto ($26) sous-vide for 4 hours before roasting. The pork is then glazed with pommery mustard and served with a creamy tangy honey mustard sauce.

We loved the right amount of fats in it that created the melt-in-the-mouth sensation without feeling greasy and fatty.While the chewy pork might get “jelly” after a few slices, the pommery mustard cuts through the jelak-ness and guiltiness when we chew on the fatty slices.

The Foie Gras ($24) was our 2nd favourite dish that came in 2 slices (50g each). Pan-seared on the surface and served with onion marmalade and topped with crushed almond dragee.

While the foie gras had a smooth fatty bite to it, the crushed almond dragee was the highlight, adding crunch to the bite.

It was addictive to experience the difference in texture between the soft foie gras and the crispy almond dragee.porta3

Their weakest link would probably be the pastas – Chilled Angel Hair with Avruga caviar, Japanese kombu seaweed and truffle oil & Ravioles De Royans ($22), cheese ravioli with tomato coulis and pesto.

Both the pasta were slightly overcooked and not al dente though.

The Coconut Blancmange ($12) was surprisingly refreshing with coconut custard topped with passionfruit coulis for a citrusy taste. The same crushed almond dragee used in the Foie Gras were sprinkled on top for an additional bite.

Some of the dishes were pretty interesting and well executed, and we would probably to try more items on their menu.
